Mixologist Austin Zimmer describes the Avo-rita as the love child of guacamole and a margarita. It’s not such an outrageous commingling, considering how well the individual elements of that pairing complement each other. “The combination of avocado with tequila gives you a smooth consistency, with flavors that are well balanced. It’s a refreshing-yet-smoky cocktail that’s a new take on an old favorite,” she says.

Zimmer runs the Avo-rita on the menu at Casa del Toro, a Oaxacan-inspired taqueria with an impressive list of hand-crafted cocktails. She combines reposado tequila with a creamy housemade avocado cordial, Cointreau, fresh lime juice and agave syrup. That mixture is shaken and strained over ice into a salt-rimmed glass, then smoked over applewood chips and cloched for an aromatic and dramatic finish. “The agave and lime juice complement the avocado and tequila very well,” says Zimmer. She credits the cocktail’s success to its fresh and natural flavors, along with its health halo. “Many consider avocado as something healthy, and I do think the cocktail appears as a very ‘clean’ drink.”
