There’s nothing dated about the taste of heirloom tomatoes, especially when prepared simply with other fresh ingredients. The flavor of the Deconstructed Greek Salad at Dexter’s New Standard is decidedly bright and fresh. This elegant play on a Greek salad highlights the tomatoes with support from cucumber crescents, pickled red onion, Kalamata olives, feta mousse, fresh oregano and olive oil.

“The tomatoes are ingredients that require care and attention to let them be the star,” says Ryan McLaughlin, Executive Chef of this concept that specializes in elevated American comfort food. “It’s so simple, yet so elegant. The care taken to grow these phenomenal heirloom tomatoes really comes through when you eat them,” he says. “This is an ingredient I look forward to every year.”
