Avocado toast has established its place on brunch menus, shareables and more, and we have the Aussies to thank for it. They created the “avo smash” years ago, and it made its way onto American menus with resounding success. The original, which typically sees a ripe avocado smashed onto artisan toast, seasoned with salt, pepper, chile flakes and finished with olive oil and lemon juice, has already seen a number of iterations here. With toast as a proven platform, it makes sense to look to the Aussies for further inspiration. Aussie-style cafés popping up across the country showcase creative takes on toast with ricotta and mushroom, as well as extending avocado toast into new directions. Here are a few combinations that carry an Aussie sensibility and represent opportunity for adaptation.

1. Ricotta Toast

Sweet-whipped ricotta + wildflower honey + fresh raspberries
Whipped ricotta + caramelized onion + balsamic glaze
