BBQ Hoisin Breaded Wings with Pickled Watermelon

Ingredients

  • 4 c hoisin sauce
  • 2 c low sodium teriyaki sauce
  • 16 cloves garlic, minced
  • 4 oz fresh ginger, grated
  • 4 oz chile crisp oil
  • 24 lb Tyson® Breaded Chicken Wings
  • To taste sesame seeds
  • Red pepper flakes, to taste

Pickled Watermelon:

  • 6 c apple cider vinegar
  • 1 c granulated sugar
  • 3 oz fresh lemon juice
  • 1/2 oz fresh thyme
  • 48 oz watermelon

Directions

  1. Preheat oven to 425°F degrees.
  2. Combine the hoisin sauce, teriyaki sauce, garlic, fresh ginger and chile crisp oil in a bowl.
  3. Toss the breaded wings into the sauce and place in the oven. Reserve sauce.
  4. In 10 minute intervals, baste the wings with the reserved sauce until a thick lacquer has been layered onto the wings. This will allow it to coat and caramelize under the high heat to become crispy.

Pickled Watermelon:

  1. Combine the apple cider vinegar, sugar, lemon juice into a sauce and bring up to a boil.
  2. Then pour over your cut watermelon and add the fresh thyme.
