Manti, traditional Turkish dumplings, have long been prized for their small size and rich, comforting flavor. At Ala, a Levantine concept, manti not only bring indulgent satisfaction to the table; they carry deep meaning. “The process of folding these tiny dumplings is rarely done alone,” says Ceren Hunt, COO. “I grew up in kitchens where that was never just work; it was celebratory. The women in my family would gather, talk, laugh and fold together. Seeing this dish come together in our kitchen today brings that same feeling of connection, both at the table and behind the scenes.”

Ala’s manti honor tradition while feeling elevated and modern, says Hunt. Prepared fresh every day, “Each dumpling is filled with seasoned beef, cooked until tender and lightly bathed in a savory beef stock that adds depth and warmth to the dish. They are topped with spoonfuls of labneh, bringing a creamy tang that balances the richness of the beef. A drizzle of harissa introduces gentle heat and smokiness, cutting through the creaminess and giving the dish a vibrant, spicy edge.” The manti are garnished with both fresh and crispy mint. “The combination of textures—soft dumplings, silky labneh, fragrant broth and crispy herbs—makes every bite interesting,” Hunt says.
