A cocktail that blends unexpected ingredients with a name full of attitude is bound to spark interest. The Oh Snap! at cocktail bar Poka Lola Social Club checks both boxes, and the result pays off. “It’s a refreshing vegetal sipper that’s perfect for springtime,” says Lexi Parker, beverage manager, of the drink that stars sugar snap peas. One of the bar’s top-selling seasonal cocktails, the Oh Snap! returns to the menu every spring. “I love bringing flavors that people might not normally associate with cocktails. Customers are usually intrigued and then surprised by how delicious all the flavors are when combined.”The sugar snap peas are blanched, blended, strained and blended again, this time with sugar, to produce a bright green syrup. “It’s paired with tequila, a little blanc vermouth, mint, lime and a sneaky bit of overproof rum,” says Parker, who reveals that the rum was one of the biggest surprises of the R&D process. “We initially only added it to help stabilize the batch—more liquor helps extend shelf life—but it added another layer of complexity we didn’t anticipate.”
