Simple Yet Sublime Soft Baked Egg

While it may seem unassuming on the menu, Perso’s Soft Baked Egg has had a big impact since this open-kitchen restaurant debuted in 2023. Emil David, executive chef/owner, admits the dish was a last-minute idea intended as an easy pick-up for his small kitchen staff.

Contrary to his initial low expectations about its potential diner appeal, “This surprisingly has become a Perso staple and a go-to appetizer for our regulars,” David reports. “We can almost guarantee that when someone orders it, they’ve dined with us multiple times.”

The concept is simple: a silky hot egg, tangy cold crème fraîche, dehydrated sausage (to replicate a rock salt texture), burnt rosemary and rosemary oil. “It’s a familiar flavor combination, and it’s rare to find people who don’t like it. But what makes this dish special is the way we’ve made simplicity unforgettable,” says David. He credits the dehydrated sausage as the ingredient that ties the components all together. “It completes the experience, providing both texture and flavor.”
