Mexican Street Corn Atop Detroit-Style Pizza

The Elote Pizza, a seasonal LTO at Via 313 Pizzeria, “brings the nostalgic flavors of a summer fair straight to the table,” says Kristi King, culinary operations manager. Its popularity with guests is further confirmation that Mexican street corn applied as a flavor system remains an innovation darling. Here, the pizza pushes boundaries while still feeling approachable, she notes. “Most importantly, it keeps people coming back for something they can’t get anywhere else.”

The build starts with the brand’s classic Detroit-style cheese pizza, layered with crispy bacon, roasted corn and a sprinkle of Tajín to create a savory, zesty foundation. “The sweet corn is double roasted to enhance its natural flavor and add delicious char,” notes King. The pizza is finished with a generous drizzle of cilantro-lime ranch, a crumble of Cotija and a sprinkle of cilantro.

Capturing elote’s signature citrus notes was an R&D challenge, King recounts. “Incorporating fresh citrus directly into pizza can be unpredictable, as variations in ripeness often affect both texture and taste.” Via 313 opted to infuse the dough base with Tajín during the bake and then let a finish of the dressing carry it home. “Flavors develop gradually in the oven, creating a deeper, more rounded lime character that complements the richness of the cheese and dough without overpowering them.”
