Crumbled Cotija delivers a salty bite, while fresh cilantro provides an herbaceous pop. Marcelo credits dehydrated corn as the unexpected hero in the build. “It turned this dish from good to great. It’s not just a garnish; it adds a layer of crunch that contrasts with the tender lobster and silky beurre fondue.”
