Galbi is a showcase for what many consider the most beloved cut in Korean barbecue: beef short ribs. Sung explains that the dish’s signature refinements have largely come from chance discoveries or smart adaptations, rather than deliberate invention. For example, Asian pears proved better than American pears at both sweetening and tenderizing the meat.
