Sweet, savory and deeply complex, black garlic brings new dimension to menu favorites

Black garlic starts with a familiar ingredient: fresh garlic. But after weeks in a warm, humid environment, the cloves turn pitch black and soft, while garlic’s familiar pungency gives way to a complex mix of savory, sweet and tangy notes reminiscent of molasses, balsamic and tamarind. Black garlic is hardly new, but its growing presence on restaurant menus is putting fresh focus on its potential as a high-impact flavor builder.
