Best of Flavor Insights: developing decadent LTOs

When it comes to limited-time offers, many brands embrace a go-big-or-go-home approach, finding themselves unburdened by a long-term commitment to a permanent menu addition. Some offerings are downright audacious, luring and repelling guests, often in equal measure. Others follow a more centrist strategy, playing with new flavors and ingredients while remaining anchored in the brand’s core identity.

The following four Best of Flavor entries reflect the latter path, but with a twist. These LTOs aren’t going for shock value so much as decadence. And this positioning plays well with consumer desires. After all, it’s hard to resist an indulgence when the option is fleeting.

No single ingredient can take credit for the craveable luxury of these menu items—their strength lies in the interplay of the various elements.

Burger Meets Pizza on a Roll

Old Chicago has proven the power of poppables with its Sicilian Pepperoni Rolls and Buffalo Chicken Rolls, but last fall it added an unexpected variation to the format. The Bacon Cheeseburger Roll is exactly what its name implies: a burger wrapped into a pizza roll, with seasoned ground beef, smoked bacon, melted mozzarella and cheddar cheeses and pickles, all drizzled with comeback sauce, plus more on the side for dipping.

The bright, sharp notes of the comeback sauce and pickles bring a tangy lift to the hearty build—it’s still decadent but balanced. The Bacon Cheeseburger Roll was an instant hit and quickly became a top-selling appetizer, proving that two comfort food favorites can find flavorful harmony. “The success of our Bacon Cheeseburger Rolls showed us just how much guests love when we bring burger-inspired flavors into our pizza world,” says Jeremy Underhill, executive director of operations. “It’s not always what people expect from a traditional pizza joint, but that combination of seasoned beef, bacon, melty cheese and tangy accents clearly struck a chord.”

Fried Chicken With a Mexican Twist

Chicken may be a standard protein option for quesadillas and fajitas, but fried chicken is a different matter. In another mash-up marvel, Zaxbys tucked classic Southern-style fried chicken into a fajita-quesadilla hybrid. A trio of chicken fingers along with cheddar and Monterey Jack cheeses and roasted onions and green peppers are tucked into a pressed tortilla and toasted for a crunchy exterior and hot, melty interior. A topping of Southwest ranch provides a spicy flavor boost (courtesy of its jalapeño flavor) without going overboard, and a side of ranch offers another creamy complement. “You get crunch from the chicken and tortilla, balanced by melty cheese and a pepper-forward, slightly spicy ranch that ties it together,” says Alison McKay, specialist, menu services.

Indulgent but not over-the-top, the Chicken Fajita Quesadilla was so popular that Zaxbys ended up extending its limited-time run. Its success, along with other Mexican-influenced specials, have also empowered the brand to explore other global cuisines in new LTOs.

A Stack of Sumptuous Ingredients

When a dish has the word “stack” in its name, at least some degree of gastronomical hedonism is to be expected. It was certainly the case with the Smokestack Smash Burger. The LTO from Pincho layers two Black Angus patties, smoked Gouda and pecan wood-smoked bacon. Jalapeño-bacon jam and chipotle aïoli, both indulgent in their own way, introduce a kick of heat to enliven the burger build. “Every layer is built to deliver both richness and balance. The double smash patties create a flavorful crust, while smoked Gouda and pecan wood bacon add depth. The sauce and jam bring heat and sweetness, creating contrast,” says Adrian Sanchez, director of culinary.

This thoughtful balance of craveable flavors paid dividends: The Smokestack Smash Burger became one of Pincho’s highest-grossing limited-time specials of 2025 systemwide. In Texas, it beat out core menu items, and in Miami, it was among the top-three sellers during its run. The secret to its hot appeal? Per Sanchez, it was driven by “bold flavor” and “indulgence.”

Lasagna With Added Luxury

Classic lasagna, with layers of pasta sheets, meat sauce, ricotta and mozzarella, is already a rich offering, but California Pizza Kitchen was keen to turn the dial up further with a springtime LTO. In the Hearth Oven Short Rib Lasagna, two extra-thin layers of pasta belie the decadence in between: braised short rib, creamy garlic sauce, Parmesan and fresh mozzarella. While thin, the lasagna noodles are made with extra egg yolk for buttery depth and cooked in the hearth for a crunchy texture in every bite.

Meanwhile, tender, umami-rich short rib brings juicy, rich flavor, which is further compounded by the garlic sauce. “When developing and testing different sauces for the lasagna, having the garlic cream sauce with the braised short rib was a completely unexpected pairing,” says Paul Pszybylski, executive chef and VP of culinary innovation. “This dish is usually paired with a red sauce, but the garlic cream makes this so unexpected and decadent. We knew we had to move forward with this unique sauce to tie the dish together.”
