The Chicken Fajita Quesadilla at Zaxbys transforms the brand’s iconic Chicken Fingerz into a craveable new format. Three hand-breaded chicken tenders are layered onto a pressed flour tortilla with melted cheddar Jack plus grilled onions and green peppers, then finished with a drizzle of Southwest ranch. Toasting the quesadilla to a crisp exterior boosts the crunch of the chicken, balanced by the molten cheese and the pepper-forward ranch.

“The roasted peppers and onions complement the jalapeño in the Southwest ranch, bringing in true pepper flavor without overwhelming heat,” says Alison McKay, specialist, menu services, at this Southern-style fried-chicken fast casual. “We created a craveable quesadilla that makes you want to keep coming back for more.”

The Chicken Fajita Quesadilla has quickly become one of the chain’s most successful LTOs, exceeding expectations for both sales and repeat orders, and prompting Zaxbys to extend the promotion. “Feedback has been consistently strong—high marks on flavor, portion and overall satisfaction,” McKay reports. “The performance validates both the flavor direction and the format. Based on its results, we’re exploring moving it to the permanent menu in the coming year.”
