The Sicilian Breakfast Burrito at Oliver’s Italian delivers the kind of craveable ingenuity that made this handheld category a Flavor & The Menu 2026 top 10 trend. Elements of the classic breakfast favorite get twists that are equal parts Italian and local favorites, explains Sean Huggard, founder and president of the restaurant’s parent company, Shucking Good Hospitality. “Carmine Lonardo’s Italian sausage, well-known in the Denver area, provides a rich, savory base. Pesto-scrambled eggs add a bright, herby note, while roasted peppers and onions bring a hint of sweetness. Our signature Potatoes Parmigiano, along with creamy burrata, melt into the filling, making the burrito feel perfectly indulgent. Hollandaise ties the flavors together.”

While Huggard considers Denver a city where breakfast burritos are a cultural imperative, he admits to some hesitancy about putting one on an Italian brunch menu. “Initially, it felt a little out of place, but once we started playing with it, giving it an Italian spin, we knew we had something. It was just too good not to share.”

Huggard characterizes the pesto and hollandaise pairing as a particularly happy surprise: “They complement each other, rather than compete.” Indeed, all the ingredients in the unexpected filling sync up for a balanced flavor experience. “Pesto, burrata and Italian sausage are not what you expect from a breakfast burrito, but it’s a menu highlight.”
