While Huggard considers Denver a city where breakfast burritos are a cultural imperative, he admits to some hesitancy about putting one on an Italian brunch menu. “Initially, it felt a little out of place, but once we started playing with it, giving it an Italian spin, we knew we had something. It was just too good not to share.”
Huggard characterizes the pesto and hollandaise pairing as a particularly happy surprise: “They complement each other, rather than compete.” Indeed, all the ingredients in the unexpected filling sync up for a balanced flavor experience. “Pesto, burrata and Italian sausage are not what you expect from a breakfast burrito, but it’s a menu highlight.”
