The breakfast standout combines cheesy scrambled eggs with fresh avocado, diced tomatoes and seared skirt steak. Chimichurri comes on the side, adding a bright, herbaceous punch that cuts through the richness of the dish. The Chimi Steak Scrambler made its debut as an LTO in summer 2025 and quickly proved its staying power. It became the second-highest seller within the brand’s Egg-Centric menu category, generating net sales nearly 2.7 times higher than the average of other Scramblers. “It exceeded expectations and reinforced that our guests are ready to embrace bold, elevated flavors,” says Ellis. “It gives us confidence to continue pushing boundaries and exploring what’s next.”
