Seattle-style teriyaki, the foundation at fast-casual Teriyaki Madness, is a distinctly American-born tradition rooted in Japanese-American cooking. Typically served with rice and a simple salad, it’s defined by its balance of caramelized char, umami depth and broad, craveable appeal—an ideal canvas for customization and bold variations.

The Double Protein Spicy Chicken Teriyaki Bowl starts with chicken marinated in a house teriyaki sauce, then grilled, chopped and seared to order in a blazing-hot wok with a spicy, tomato-forward sauce. The result is richly layered, with smoky grilled notes, caramelized edges and a slow-building heat that lingers without overwhelming.

“While authentic Seattle-style chicken teriyaki is our core offering and the center of gravity for our menu, Spicy Chicken is really the signature dish at Teriyaki Madness,” says Nate Weir, culinary director. “It captures our entire food philosophy in one bowl: fresh, perfectly cooked chicken; bold, memorable sauces; real wok and grill techniques; and food that’s made when the guest orders.” That approach resonates. “Spicy Chicken is one of our top performers, consistently accounting for nearly 20 percent of our product mix,” he says.
