The spirals and bronze-cut texture of this pasta turn a silky crema into a memorable comfort dish
Developed by Michael Boyer, Corporate Chef for Nordstrom Restaurant Group, the Al Bronzo Fusilloni With Cauliflower Crema proves that sound technique in veg-centric cooking can deliver all the richness of a classic cream sauce. Boyer calls the cauliflower crema “quite possibly the easiest go-to recipe” he produces, noting that it also works “perfectly as a velvety purée under just about any roasted protein.”
For this application, the pasta is essential. “I love pairing this sauce with Barilla Al Bronzo Fusilloni because of the way that the spiral and rough texture that the bronze die produces retains the sauce,” he says. Finished with caramelized sharp cheese, the result is “an intensely indulgent comfort classic that will satisfy the masses.”
