Operators lean into fruit, sparkle and energy to deliver modern beverage appeal
The refresher category is one of the fastest-growing and most dynamic segments in the cold beverage market, propelled by fruit-forward, iced and caffeinated flavor profiles. While considered table stakes for the coffee shop segment, refresher-style beverages are also finding a greater foothold in quick-serve and fast-casual restaurants. Both established and emerging foodservice brands are leveraging these drinks—often available customized—to expand demand and drive incremental traffic, especially in the afternoon and evening.
Refreshers have become a somewhat broad category to explore. It ranges from drinks featuring traditional bases like lemonade, tea and club soda to creamy milk blends. There are also beverages making greater use of natural caffeine sources and nutrient additions, plus attention-grabbing layered sips and textural plays. The breadth of opportunity to leverage the high-margin growth engine represented by refreshers can be both exhilarating and overwhelming.
“Operators are introducing seasonal tea coolers with real fruit and herbs, lemonades spiked with other flavors, mocktail-inspired beverages, energy-infused refreshers and sparkling fruit drinks to appeal to consumers seeking flavorful, customizable alternatives to traditional coffee,” observes Brittney Strickland, director of foodservice marketing for Vibrant Ingredients, a supplier of natural ingredients and beverage solutions. “Innovation is being driven by a blend of flavor experimentation, functional benefits, flexible caffeine positioning and more engaging textures and formats,” she continues.
With a category this expansive, the clearest path forward starts with understanding what’s driving the trend—and who is showing up for it.
DRIVERS AND DEMOGRAPHICS
According to Datassential, refreshers are projected to grow 180 percent over the next four years. Consider that 34 percent of consumers now use refreshers to replace caffeinated beverages—a number up from 28 percent in 2024, which signals a shift from “novelty” to “routine behavior.” In fact, trend analysts at the company reveal that 13 percent of consumers purchase refreshers multiple times each week and another 13 percent do so once a week. An estimated 14 percent do so at least once a month.
Refreshers have surged because they deliver on their core promise: They’re genuinely refreshing. That means more than cold, fruity or lightly sparkling. For consumers, “refreshing” signals a reset. It’s the lift without the weight of coffee, the clarity without the bitterness of tea. It’s the bright, juicy hit that hydrates while it energizes.
Operators can lean into the strength of that promise, while leveraging the power of other motivators. These include consumer interest in global flavors, multi-sensory experiences, functional benefits and wellness cues. Taste and health remain the leading motivators behind ingredient preferences in energy-boosting refreshers, says Strickland.
Plus, as today’s “little treat” culture continues to influence choice, refreshers can provide a few moments of indulgence or escape that’s flavorful, functional—and usually social media ready.
While younger demographics are more likely to act on social media discoveries for food and drink, confirms research from Mintel, trend analysts at Datassential find that Millennials are the core consumer group for refreshers, especially as a substitute for traditional caffeinated beverages. Overall, Gen Z and Millennials are the generations most open to trying new beverage trends, according to 2025 research from Mintel.
As a category expanding in multiple directions at once, refreshers give high-volume foodservice operators plenty of room for menu diversification and the development of an LTO calendar designed to boost engagement among younger consumers. Attention on making these drinks fun to customize is essential, says Mintel.
Another key benefit? The refreshers category is a low operational lift, says Strickland, countering a common misperception that can be a barrier to entry. While operators might eventually want to add special equipment like a bubbler, getting started with refresher beverages can be fairly straightforward, using current base offerings like lemonade and tea and simply adding different syrups and various inclusions. “You can expand menu offerings without adding more equipment,” she notes.

FLAVOR FORWARD
The refreshers category is dominated by fruit flavors—mostly familiar favorites, although with some tropical and “exotic” fruits finding favor, as well. According to research from Datassential, strawberry, lemon and mango lead in refreshers, each with more than 30 percent penetration, followed by pineapple, orange and peach.
But in looking at fruit flavors that are showing the greatest growth, brighter and bolder fruits are demonstrating remarkable potential. These include pomegranate (up 147 percent in the last year), raspberry, dragon fruit and blueberry.
Flavor combinations present another exciting opportunity for menu developers exploring the refreshers category. Consider strawberry-watermelon, passionfruit-guava, mango-lime and dragon fruit-peach among examples of fruits that complement and contrast well. Blackberry and orange is a combo that Datassential has tagged as emerging.
WHAT ELSE SHAPES THE SIP
Beyond flavor, savvy operators are guided by other significant factors in the development of trend-forward beverage refreshers. Strickland identifies four areas driving innovation in this category.
- Sensorial Exploration. Consumers are looking for beverages that fully engage other senses besides taste. “Visual appeal, texture, aroma, temperature contrasts and layered drinking experiences all contribute to making refreshers feel more premium and memorable,” says Strickland.
- Experiences. “Refreshers are becoming an experience, rather than ‘just’ a beverage,” she notes, suggesting operators look to LTOs, customizable builds, vibrant colors and shareable presentations to create excitement, prompt social sharing—and encourage repeat purchases.
- Inclusions. “Textural inclusions are one of the fastest-growing areas of innovation,” says Strickland. “Popping boba, fruit pearls, jellies, fruit pieces, aloe, candy toppings and flavored cold foams can transform a simple refresher into an interactive, indulgent beverage.” Even better? They can offer opportunities for premium pricing.
- Functional Add-Ins. “Consumers increasingly expect beverages to deliver additional functional benefits,” she notes, pointing to such ingredients as electrolytes, natural caffeine, vitamins, prebiotic fiber, adaptogens, botanicals and collagen as examples. “These allow refreshers to support energy, hydration, gut health and/or overall wellness while maintaining broad consumer appeal.”
