The Butterscotch Pot de Crème at The Graceful Ordinary, a fine-dining concept featuring seasonal American fare, proves that nostalgia still has plenty of runway, especially when layered with thoughtful texture and balance. Martina Preradovic, pastry chef, builds the dessert around a silky butterscotch custard flavored with burnt brown sugar and rum, then tops it with salted caramel, tangy crème fraîche whipped cream and a delicate pecan Florentine crisp. “Each component works together to give contrast between sweet and salty, creamy and crunchy,” she says.

The dessert has been on the menu since opening day, earning a loyal following. “It was actually the dish that I presented to our owner when applying for the position,” says Preradovic. “He loved it so much he insisted we put it on the menu, and it’s never left.”

While the flavor profile leans into familiar comfort, deft touches that bring refinement make it a standout. Among these, the Florentine crisp, developed after an initial nut brittle proved too heavy-handed, delivers a delicate crunch against the rich custard. The result is a dessert that feels timeless yet elevated, tapping into consumers’ enduring love of salty-sweet combinations.
