Peruvian Ingredients, Chinese Technique, One Bowl

At Brasa Peruvian Kitchen, a fast-casual concept with locations in Toronto and New York, the Chifa Braised Beef Bowl introduces diners to one of Peru’s most influential culinary traditions. Chifa cuisine emerged from the marriage of Chinese cooking techniques and Peruvian ingredients, both of which are reflected in this bowl entrée. Rich braised beef short rib is layered over seasoned rice and mixed greens, then topped with broccoli, roasted red onions, scallions, sweet drop peppers, tangy salsa criolla and a finish of the brand’s Hot Rocoto-Lime Dressing.

“Most people are familiar with Chinese food, and many have experienced Peruvian food, but few know about the fusion of the two cultures,” says Michel Falcon, founder and CEO. “Chifa cuisine is one of Peru’s greatest culinary contributions, and this bowl introduces guests to that history in an approachable way.”

The bowl’s success has gone beyond flavor alone. “We expected people to enjoy the flavors, but we didn’t anticipate how interested they would be in learning about the Chinese influence on Peruvian cuisine,” says Falcon. “The bowl became both a conversation starter and a customer favorite.” By introducing guests to the story of Chifa through an approachable format, Brasa demonstrates how cultural storytelling can be every bit as compelling as the food itself.
