Not Quite the Classic Banh Mi

Bon Me | Based in Boston

Ali Fong

The Namesake at Bon Me, an Asian-inspired restaurant and food truck concept, takes the flavor architecture of the Vietnamese banh mi and moves it into a modern sandwich with comfort-centric appeal. Miso-braised pulled pork takes center stage, layered with chicken pâté, spicy mayo, pickled carrot and daikon, crisp cucumber and fresh cilantro, all tucked into a toasted baguette that delivers the signature crunch associated with the iconic sandwich.

“Inspired by the classic Vietnamese banh mi, The Namesake is our bold, modern take on the beloved sandwich,” says Ali Fong, chef and co-founder. Rather than adhering to strict authenticity, Bon Me leans into reinterpretation, creating a sandwich that introduces broader audiences to the banh mi’s characteristic contrasts while layering in signature flavor touches, like the savory depth of the miso-rich braise.

“It’s a reimagined banh mi designed for those eager to step just outside the traditional and discover something unexpectedly delicious,” says Fong. “Those already familiar with banh mi appreciate our inventive interpretation, while first-timers are drawn in by its dynamic combination of flavors and textures.”
