Northwest Burger With Locavore Flavor

In developing a new core menu item, the culinary team at Burgerville, a regional quick serve, looked to its Pacific Northwest locale, and existing lineup, for direction. The resulting Grass-Fed Sweet Onion Burger reflects both influences. “This burger takes inspiration from our legendary Walla Walla Onion Rings, which are locally sourced. They are delectably sweet and pair nicely with our grass-fed beef,” says Becky McGrath, executive chef. “The Grass-Fed Sweet Onion Burger is a delicious mix of rich flavors—sweet and savory—in each bite.”

The ingredient list reads like a who’s who of regional purveyors: beef from wild grass-fed cattle at Carman Ranch in Oregon; two-year aged white cheddar from Face Rock Creamery, also in Oregon; and fluffy buns from Portland’s iconic Franz Bakery. A one-two punch of onions (a sweet onion spread and griddled onions) ensures craveability. “Onions are a great base and add tremendous flavor to any dish. We wanted to use a griddled onion from the beginning, as we know it has an intense sweetness and delicious caramelization,” McGrath explains.

Since launching earlier this year, the burger has earned rave reviews. McGrath credits much of its success to those premium ingredients with local ties. “Being able to provide a burger with such a strong sense of place in a quick-service setting makes a big difference,” she says. “It’s something you’d only expect to find at a full-service restaurant.”
