
This Southern-inspired take on mac and cheese layers bold flavor and texture into every bite. Developed by Zoë Adelstein, Executive Chef/Owner of One More Bite Catering & Events in Boston, the Cajun Mac and Cheese Waffles features Barilla Pipette, cooked just to al dente, then chilled for structure. Andouille sausage is seared and combined with caramelized onions, sautéed red peppers and garlic. A velvety cheese sauce (made with a blond roux, heavy cream, milk, sharp cheddar, Cajun spices, mustard and hot sauce) ties it all together. The mixture is combined with the cooked Barilla Pipette and sausage, then spread onto a sheet tray, chilled until firm and sliced into portions. With more cheese sandwiched in between, each slice is pressed in a waffle iron until crisp and golden on the outside and melty on the inside. The result is a craveable mac and cheese waffle with a bold, Southern kick.
