Catching the Wave of Flavored Tequilas

The Beauty Is in the Balance

At its simplest, hot honey ranch requires little more than bringing its two namesake components together. The National Honey Board’s version pairs cool, tangy ranch with the slow burn of hot honey, creating a creamy, spicy and naturally sweet sauce. “I wanted something that could go from drizzling over fried chicken to tossing with a crunchy slaw or salad without missing a beat. That balance of creamy, tangy, and sweet heat is what makes it work in so many dishes,” says Ian Ramirez of Mad Honey Culinary Studio, speaking on behalf of the National Honey Board.

But simplicity leaves room for signature differentiation. Operators can push the ranch side more buttermilk-forward, herbaceous or garlicky, while the heat can move into different flavor profiles. Jalapeño can bring bright green heat; Aleppo pepper, a fruitier warmth; chile crisp, texture and savory depth; and gochujang, fermented complexity. Honey helps hold those elements together. Rather than simply making a spicy sauce sweeter, it can soften sharp edges, extend flavor and create a more rounded progression from sweet to heat to creamy finish.
