The finishing flourish—and the key flavor note of the dish—is a vibrant green goddess sauce drizzled over the top. Packed with basil, cilantro, arugula, lemon and garlic, the sauce introduces bright, herbaceous notes and acidity that cut through the richness of the croissant, eggs and hollandaise. A sprinkle of garlic-Parmesan crunch adds a final layer of texture.
“The green goddess sauce has been the surprise-and-delight element for guests,” says Joel Reynders, VP of culinary and beverage at the breakfast brand. “Its fresh herb flavor paired with the lemony hollandaise complements the ham, asparagus and Parmesan beautifully while bringing a unique seasonal twist.”
The dish proved a standout during its spring run, generating nearly $500,000 in systemwide sales and outperforming expectations. “The biggest surprise during development was just how well the green goddess sauce paired with the hollandaise,” says Reynders. “The flavors brought brightness and balance that took the Benedict to another level.”
