Fast-casual Bread Zeppelin has built its identity around a defining idea: a novel approach to reimagining the time-honored salad. For each Zeppelin sandwich, an artisan baguette is toasted, hollowed out and stuffed with a fully composed chopped salad, creating a portable, all-in-one eating experience.
“Packing these flavors and ingredients into our crispy artisan baguette allows our guests a completely new experience, transforming a salad into a uniquely satisfying, portable meal,” says co-founder Andrew Schoellkopf. Customers can select from a variety of curated signature options or build their own from more than three dozen ingredients.
The brand’s recent LTO, the Chicken Tinga, showcases its platform at its most dynamic. Slow-simmered chicken tinga, still warm, is tossed with cilantro basmati rice, corn salad, Cotija cheese, pickled red onion, jalapeño and kale. The layering of temperature and texture contrasts helps drive its impact. “The warm offering is a shift from what guests were used to,” says Schoellkopf. “Moving from crisp, cool ingredients to a warm, comforting protein doesn’t just satisfy, it adds a sense of indulgence.”
