It stars crispy chicken, with cucumbers, watermelon radish and grape tomatoes adding snap. A drizzle of Japanese barbecue sauce introduces umami, while wasabi aïoli contributes a lingering heat. Wonton strips and a dusting of togarashi amplify the texture play. The housemade Carrot-Ginger Dressing ties it together, offering a lightly sweet, citrusy lift.

“The Tokyo Sesame Crunch is a salad that brings together crisp textures and bold Japanese-inspired flavors. It feels indulgent without being heavy,” says Julie Hargis, director of culinary. The salad has become one of the brand’s top sellers, with guests responding to its balance of flavor and texture. R&D underscored the importance of that interplay. “We were pleasantly surprised by how well the dressing elevates the dish,” says Hargis. “Early trials taught us that texture was just as important as flavor—adding the wonton strips gives the dish the extra crunch that makes it memorable.”
