For Robbins, the Butter Bun succeeds because it complements barbecue rather than competing with it. “Great barbecue is big, bold and indulgent—and the King’s Hawaiian Butter Bun is the perfect bun,” he says. “It has that classic brioche-style flavor to complement the ’cue and it’s sturdy enough to hold up to all the sauce, marbling and bark. It’s a high-performance product that is still light and soft, so it doesn’t take away from the texture of the barbecue.”

The partnership with Lettuce Entertain You extends beyond Windy City Smokeout itself. At a launch event hosted at the hospitality group’s renowned Three Dots and a Dash in Chicago, the Butter Bun steps into a different role with the debut of Spicy Tuna Toast, an LTO featuring bluefin tuna, spicy mayo and sweet soy atop a toasted King’s Hawaiian Butter Bun.
The dish showcases the versatility of the bun, demonstrating how its buttery richness and soft chew can move seamlessly between barbecue builds and globally inspired small plates. The Butter Bun also rides the growing momentum around Hawaiian-style buns in foodservice. According to Datassential, Hawaiian buns are the fastest-growing bun in quick service, projected to grow 55 percent over the next four years.
