Challenges Fuel Creativity at the Culinary + Cocktail Clash

ProStart students team up with major restaurant brands

Innovation often begins with a challenge. At the California Restaurant Foundation’s 15th Annual Culinary + Cocktail Clash, restaurant brands were tasked with transforming a basket of ingredients into original menu creations. The result? A vibrant and playful display of flavors that showcased the teams’ creativity and skill.

But there was a twist: Each restaurant was paired with a ProStart® student sous chef. Over a two-month mentorship, chefs and students worked side-by-side to test recipes, giving students real-world experience and professional connections. The Culinary + Cocktail Clash, held in late June, represents the culmination of the mentorship, with teams scaling their bite-size creations to feed a crowd of 400, and judges voting on the top dishes and beverages across award categories.

Among the required products were Mr. Pibb, Campo Grande Ibérico Pork Belly, kumquats, Okinawan yam and culantro. The combinations forced teams to rethink familiar ingredients and discover new flavor applications.

The team that embodied that sentiment the most was Stonefire Grill, which won the coveted Judges’ Choice Award with its Croqueta de Oro (“Golden Croquette”). The dish featured a crisp Okinawan purple yam croquette filled with Campo Grande Ibérico Pork Belly and finished with culantro, pomegranate and kumquat. The team’s masterstroke was a Mr. Pibb jus that tied the dish together, balancing savory richness with subtle sweetness and bright citrus notes.

On the beverage side, Lazy Dog Restaurants earned the Tito’s Golden Goblet with Sunset Over the Canyon Rim. The cocktail, with dazzling layers that faded into a sunset, combined housemade kumquat jelly reduction, tropical juices and Topo Chico Lime before being topped with a foam swirled with Mr. Pibb and pomegranate seed simple syrup. The finishing touch—and a remarkable ingredient transformation—was a dried Okinawan yam ring. By turning a root vegetable into a cocktail component, Lazy Dog showcased how beverage innovation can emerge from ingredients rarely considered behind the bar.

Another standout was the Pibb and Pom Belly Slider from Urban Plates, which won the Marukan Vinegar Award. The slider featured soda-braised pork belly layered with sweet-tart kumquat barbecue sauce, napa cabbage and pomegranate slaw dressed in a Sprite-ponzu vinaigrette, pickled kumquats and charred cilantro aïoli on a toasted bun. The dish demonstrated how acidity can elevate multiple elements within a single menu item.

The event serves as the California Restaurant Foundation’s largest fundraiser for ProStart, which prepares thousands of California high school students for careers in restaurants and hospitality. Over the past 15 years, Culinary + Cocktail Clash has raised more than $1.1 million to support culinary arts programs in public high schools across the state.
