Ube Cheesecake French Toast Phenom

Few global ingredients are as visually striking as ube, the signature Filipino root vegetable, making it an ideal choice for an over-the-top mash-up. At sister brunch concepts Ruby Slipper & Ruby Sunshine, the Ooh-Bae Stuffed French Toast LTO puts the purple tuber front and center, supported by layer upon layer of indulgent ingredients.

Cloud-like, vibrantly hued ube cheesecake is tucked between slices of thick-cut brioche, dipped in a signature French toast custard and griddled. Before flipping, a layer of cinnamon-sugar glaze melts into the brioche for a perfectly crispy, caramelized crust. The dish is finished with silky lemon curd, whipped cream and passionfruit boba, a late addition that proved to be a sensory smash. “It truly gave the dish the ‘pop’ of flavor that was so complementary to the zesty lemon and the subtle sweetness of the ube cheesecake,” says Marla Chua, culinary operations partner.

While the Ooh-Bae Stuffed French Toast didn’t best the brand’s other French toast LTOs, “Its impact went beyond numbers, highlighting a culturally rich ingredient and inviting guests to experience something new and meaningful,” Chua says. “Rooted in Filipino tradition, ube has always been a staple of my upbringing. Its striking violet color captivates at first glance, while its delicate notes of vanilla, pistachio and sweet potato create a flavor that’s both nostalgic and irresistibly craveable.”
