Each 6-oz. chicken breast is sliced and pounded thin, then marinated for 24 hours in a blend of salt, sugar, white pepper, garlic powder, onion powder, curry powder, cornstarch and water before being coated in panko breadcrumbs and fried to order. It’s then glazed in one of three sauces: Chinese spicy barbecue sauce, savory garlic powder or Sichuan mala powder. The result is an ultra-crispy exterior with a tender, juicy interior that holds its structure with every bite while conveying craveable, signature flavor.
