Shrimp Bowl with Smoky Heat and Tropical Sweet

The sweet-heat trend finds a fresh expression in the Sweet Chili Shrimp Bowl, a summer LTO at Walk-On’s Sports Bistreaux. Blackened shrimp tossed in a sweet chile glaze tops white rice, alongside mango salsa, avocado, cucumber, purple cabbage and fresh lime, bringing together smoky heat, tropical sweetness and cooling richness.

“What took this one to another level was the combination of the blackened shrimp with the sweet chile glaze,” says John Hagen, senior director of culinary and beverage. “The smoky heat from the seasoning paired with the sweetness of the glaze created a balance that made the bowl feel bold, fresh and really craveable without becoming too heavy.”

Hagen credits the bowl’s success to the way it signals health, functionality and flavor all at once. “It has strong visual appeal, layered textures, balanced flavor and feels modern without being overly complicated,” he says. “It gives guests something that feels lighter and fresh while still being craveable and satisfying.”

The response during testing affirmed the concept’s broad appeal. Hagen notes that the Sweet Chili Shrimp Bowl outperformed the other bowl concepts introduced during the test phase, generating strong repeat orders and guest retention.
