A steakhouse classic gets a luxe seafood twist in the Maine Lobster Tail Rockefeller at Truluck’s Ocean’s Finest Seafood & Crab. Inspired by the iconic Oysters Rockefeller, this popular LTO reimagines those signature flavors through a richer, more indulgent format.

A Maine lobster tail is roasted in its shell, then topped with creamed spinach layered with Parmesan, garlic and a touch of Pernod. As it bakes, the topping develops a light gratin, creating a savory, creamy finish that complements the natural sweetness of the lobster. Presented in oyster shells, the dish nods to its origins while further elevating the experience.

“I wanted to reinterpret the classic flavors of Oysters Rockefeller through the lens of luxury seafood,” says Thomas Dritsas, corporate executive chef. “It succeeds because it connects something familiar with something indulgent,” he adds. “Guests recognize the Rockefeller flavor profile, and pairing it with lobster transforms it into a dish that feels celebratory while still approachable.” The addition of Pernod was a revelation. “The subtle anise note brightens the richness of the creamed spinach and Parmesan while allowing the lobster’s natural sweetness to remain the focus,” he says.
