State of the Plate: Why Late Night Is a Sleeper Hit

Clever menus and special promos are boosting the after-hours daypart

It’s no wonder that chefs and restaurateurs are looking a little starry-eyed: Late-night dining has proved a shining spot in an otherwise challenging business environment. Delivery titan DoorDash reported a 44 percent jump in orders between midnight and 5 a.m. last year, and Technomic’s Ignite database indicates that this increase is driven largely by Gen Z and Millennial diners. Given their propensity to stay awake long after Gen Xers and Boomers have called it a day, they’ve become an appealing target for savvy operators seeking a sales boost.

Limited-Service Brands Keep the Lights On

The recent past has seen major quick-service chains like McDonald’s and Burger King expand their hours of operation—the former at a “vast majority” of its units last summer and the latter at 1,200 stores starting last fall. Taco Bell invites diners to “Live Mas” at all hours of the night, and a quick scan of Los Angeles units shows store closures ranging from midnight to 5:30 a.m.

From the menu perspective, some competitors have stepped up with targeted nighttime specials, like last year’s Carl’s Jr.’s BYOB, Build Your Own Bag, a promotion that featured a selection of sandwiches, sides and a dessert, all served with four-piece signature Chicken Stars. At Jack in the Box, the long-running Munchie Meals have received a new lease on night life with Build Your Own Munchie Meals, created in partnership with music celebrities. The 2025 T-Pain Munchie Meal, for example, included a choice of sandwich, plus a taco, curly fries, cookie and soft drink, all accompanied by an official T-Pain air freshener.

White Castle lit up the night sky with its Night Castle promotion and has gone all-in on the daypart. Launched with a special merch lineup including baseball jerseys, T-shirts and table pong sets, it invites nighthawks to nosh on favorites like cheese fries, desserts-on-a-stick and chicken items, which the chain says are best-sellers between 11 p.m. and 5 a.m.

Fast-casual chains have jumped on board the midnight express as well. Zaxbys’ limited-time Zappetizer Trio was a mix-and-match combo of three appetizers and sauces available after 8 p.m., while Taco Cabana’s TC After Dark Menu launched with burritos like Jalapeño Nacho, Cheeseburger and Steak & Tater Scramble options, all priced at $5.99.

Full-service Chains Go From Dusk to Dawn

Midscale operators like Waffle House are late-night OGs, and Denny’s recently underscored its round-the-clock cred with a tie-in to the movie Good Fortune. The promotional Good Fortune Burger (topped with a swirl of creamy ranch dressing) and the Budget Angel Chicken Nuggies (boneless wings with choice of dipping sauce) were aimed at reminding diners of the brand’s operating hours. To drive the point home, the burger was offered at 50 percent off from 4 p.m. to 4 a.m.

Casual-dining chains may have a competitive advantage as they transition their happy-hour menus to late night. That’s the case at Lazy Dog Restaurant & Bar, which addresses both dayparts with a fun food menu that includes Tikka Masala Meatballs and the new Korean Fried Chicken Bao Buns. The latter promise to wake up taste buds with a gojigaru pepper glaze, kimchi aïoli and pickled cucumbers. The brand reports increased after-dark traffic and strong engagement around shareable items and more flavor-forward, globally inspired dishes like these. BJ’s Restaurants has also experienced resurgent late-night traffic based partly on the adaptability of its beverage menu that features house-brewed beers, ciders and soft drinks, along with on-trend cocktails like White Peach Boba-Rita with strawberry popping boba.

Independents Cater to Night Owls, Too

Local dining guides and social media sites are chockablock with after-dark recommendations like Coppelia in New York City. A Latin diner that takes its name from an old-line Havana operation and offers 24/7 favorites like Huevos Rancheros with tomatillo salsa and morros (beans); Oxtail Empanadas made with plantain dough; and Media Noche, the classic sandwich featuring roasted pork, ham, Swiss cheese, pickles and garlic mojo on a brioche roll. The Big Apple’s nocturnal scene also received a big boost recently when numerous news outlets hailed the return of all-night service at Ukrainian mainstay Veselka, a vaunted East Village destination for New Yorkers jonesing for comfort food like cheese-and-potato pierogis, borscht and stuffed cabbage.

New York may be known as the city that never sleeps, but Chicago’s appetite for late-night noshing makes it a perfect location for White Palace Grill, which started life in 1939 and is still dishing up all-day breakfast and classic diner dinners like Corned Beef & Cabbage. New Orleans doesn’t sleep much either, and Melba’s, which bills itself as “America’s busiest poboy shop,” doesn’t close. Breakfast here runs from 4 a.m. to 11 a.m. and offers classics like Shrimp N’ Grits and signature sandwiches like Hot Sausage & Egg Poboy.

Outlook and Opportunity

Looking ahead, lifestyle factors will support continuing growth of the late-night daypart. Remote and gig workers, whose numbers have increased substantially since the pandemic, have traded their conventional three-meals-a-day habits for on-demand meal and snack options.

While independent operators will continue to dish up familiar comfort favorites, Technomic intelligence indicates the enduring after-hours popularity of menu staples like cold beverages, fries and ice cream, all of which invite chain chefs to step up and spiff up existing offerings.

The cold beverage category is a major hot spot at any time of day or night. So-called dirty sodas that combine soft drinks with mix-ins like fruit, fruit syrups and cream, once the province of quick-serve chain specialists, are bubbling up all over. Applebee’s new Dirty Fountain Selections feature specials like Passion Blue Dew that infuses Mountain Dew Dark Berry Bash with passion fruit, whipped cream and a cherry that can light up the night for patrons in search of nonalcoholic quaffs.

Because the night belongs to younger diners who will inevitably grow older and trade bar hopping for channel surfing, one might expect night traffic to lighten up. But the emergence of the digitally driven, 24-hour economy suggests that restaurant late shows will remain a long-term trend—not a here-tonight and gone-tomorrow fad.
