Lamb shank is an enduring tradition in Persian cuisine, but diners need not travel the Silk Road in search of this quintessential dish. They can find themselves transported by the authentic version served at Persian Basket Kitchen & Bar. Authenticity is found in the preparation of the Slow-Cooked Lamb Shank. “This flavorful plate will cook slowly for more than eight hours, so the tender meat easily falls off the bone,” says Homa Ghasemi, Executive Chef.

The hearty dish delivers warm, heady flavors. The lamb is slow cooked with a blend of traditional Persian spices, including turmeric, cinnamon, cardamom, bay leaves, rosemary, nutmeg and saffron. The accompaniments are also key to the experience: The lamb shank is garnished with caramelized onions and served with fava beans, dill basmati rice and saffron. “The plating is absolutely stunning,” says Ghasemi.
